Pearl Barley--- 2cups (Cook as packet direction cool that)
1/2 cup (125 mL) yellow peppers, diced
1/2 cup (125 mL) cucumbers, seeded and diced
Cherry tomatoes, halved--250ml
Red onions, chopped ---(125 mL)1/2 cup approx
Light feta cheese, crumbled --- (125 mL) 1/2 cup approx
Oregano small
Capsicum 2 to 3
Parsley According to requirement
Lemon juice---(45 mL) Almost 3 to 4 tsp
Olive oil---(30 mL) Almost 2tsp
Chicken breast- shredded---250 g Boiled
Salt and pepper---According to taste
In a large bowl simply mix each ingredient except Salt and pepper. Mix and then add salt and pepper.
